When I asked Top Chef Canada finalist Trevor Bird what to order from his new restaurant’s dinner menu, he replied without blinking, “Canned tuna.”
Watch a few episodes of the reality show and you’ll begin to trust the young chef’s ballsy decisions. One bite into his recommendation and I was sold — this time, in real life.
He wasn’t around when I returned to Fable for lunch, but considering his passion and skill (as seen on TV), and the four dinner-time dishes I tried (and loved), a recommendation wasn’t necessary.
You’ll find three sandwiches and four sides — served a la carte style — on the small menu. The Chickpea Fritter Sandwich arrived looking gorgeous and smelling of fresh bread. Bright pink house-pickled onion, salty chickpea fritters and pea shoots were piled high between light ciabatta, lathered with curry mayo and very mild raita.
A mason jar of Chilled Tomato Soup was the meal’s highlight. Thick, creamy and topped with fresh basil — it was delightful.
