As we were walking into Kettleman’s Bagel Co., an employee was wheeling in a large pail of hardwood for the wood-burning oven. We could smell smoke from the fire outside, and inside we were greeted by its warmth and the smell of freshly-baked bagels.

Montreal-style bagels are rolled by hand and boiled in water before being baked on planks in a wood-fired oven. They are dense, slightly sweet, and chewy. At Kettleman’s, you can select from 14 different varieties, including onion, garlic, pumpernickel, and herb and cheddar.

I chose a classic Breakfast Bagel sandwich on a white-seeded bagel. The bacon was crispy, however the cheese could have been sharper, and the egg could have been less rubbery and more salty. But the toasted sesame bagel made all those blemishes disappear. Every bite was nourishing and filled my tummy with comfort.
