Ingredients:
• 4 skinless boneless turkey breasts
• 2 tbsp (25 mL) chopped fresh rosemary
• 1 tsp (5 mL) crushed chili flakes
• 1 tbsp (15 mL) coriander seeds, coarsely crushed
• 2 tbsp (25 mL) olive oil
• 4 mandarin oranges
• 14 oz (400 g) bean sprouts
• 2 2/3 oz (75 g) watercress
• 8 scallions, sliced
• 4 tsp (20 mL) sugar
• 8 tbsp (125 mL) mayonnaise
Method:
1. Put turkey steaks into shallow dish. Sprinkle with rosemary, crushed chili flakes, coriander seeds and 1 tbsp (15 mL) oil. Season and turn to distribute seasonings.
2. Peel mandarins, then slice in half across middle and discard seeds.
3. Mix sprouts, watercress and scallions; divide among four plates.
4. Heat frying pan over high heat. Brush turkey with remaining oil. Cook over high heat until well browned and cooked through. Transfer to plates.
5. Add mandarin halves to pan, cut side down, and cook 30-60 seconds. Transfer to plates, browned side up, and top each half with 1/2 tsp (2 mL) sugar. Add dollop of mayonnaise to each plate. Serve.
